From centuries-old olive groves around Akhisar and the Aegean coast, we cold-press extra virgin olive oil and cure table olives using time-honoured methods — bottled, packed and shipped worldwide with full batch traceability.
Our Story
Olyvara grew out of long partnerships with smallholder olive growers around Akhisar and across Turkey's Aegean coast. We set out to keep more of the value in the hands of the people who tend the trees, instead of letting it disappear into a long chain of middlemen.
Each harvest, olives are picked at the right ripeness and pressed within hours at our cold-press facility, preserving the aroma and polyphenols nature put there. The result reaches your table under one name: Olyvara.

Our Process
From the moment the olives are picked to the moment they leave our facility, every stage is documented, tested, and held to international standards.
Olives are hand-picked or shaken from the branch at the precise ripeness required for each product — green and firm for table olives, or just turning colour for oil.
Olives are milled and cold-pressed within hours of harvest, below 27°C, to protect the natural aroma and polyphenol content of the oil.
Every batch is tested for acidity, peroxide value and sensory quality in our lab before being filled into tins, bottles or bulk containers.
Cartons are palletized and prepared for shipment, whether by sea freight or overland, to markets across the world.

Every bottle and carton carries a lot number and harvest date. A QR code connects buyers straight back to the grove and the pressing date.

Before every shipment, oils and olives are tested at an independent accredited laboratory. Free acidity, peroxide value, UV absorbance and sensory panel scores are fully documented.

Scan the QR code on any bottle or carton to instantly see which grove the olives came from, which day they were pressed, and the batch's full lab analysis. Transparency begins in the grove.
Certifications
Export & Logistics
Bottled and canned products are cartoned, stacked on pallets and loaded into standard dry containers bound for the port of İzmir. Every shipment travels with full documentation and lot-level traceability.
Cartons and tins are stacked on export pallets in a stable pattern, corner-guarded and shrink-wrapped; every pallet is labeled with its lot and production date.
Pallets are loaded into 20' and 40' dry containers at our Akhisar facility, protected from heat and direct light for the full journey.
Containers are trucked to the port of İzmir and shipped FCL or LCL worldwide, with customs documents, certificates of origin and lab analysis reports on board.
